I have a rule: "If both my husband and I don't
like a dish, it never goes in my recipe box!". What's the point
of spending my time making a dish that I know won't be liked? So
if it passes the test I keep it. Then I know when I look through
my box, I'll only pull out recipes I know we'll both like! |

A Little Background: Who would
have ever thought I'd have a website about Italian cooking?! When
I was younger,
I never had a real appreciation for good food, and I certainly
didn't enjoy cooking. But all that began to change 10 years ago
when I decided to visit my Italian relatives in Italy for 10 days.
Little did I know a tiny seed was planted that would grow into
a love for italian cooking. I couldn't speak Italian and they
didn't speak English so food was the common denominator. I still
remember to this day how the salad was so simple and yet so good,
and the white lasagna actually tasted great! And portions... forget
it! I remember being fed so much that I had to secretly slide
some of my food onto my cousin's plate! By the time I left, that
was no longer necessary... I learned to eat every morsel and loved
it all! The first time I asked for seconds they were so happy!
But it would take 10 years until I would really begin to realize
that good Italian cooking could be simple, easy and taste oh so
good! If it's not simple, I won't cook it!
The Present: Now I'm married
and God couldn't have put a better man in my life. Not only is
he Italian, he has an appreciation for good food and cooking!
When we first got married the only thing I knew how to master
in the kitchen was chicken fajitas. This worked out fine... until
my husband begged me to please stop making fajitas! And hence
my journey in the kitchen began. I noticed every time we'd go
up to visit his family, my Italian mother in law always had the
ability to just whip up a dish and it would taste great! Especially
after our long drive. So it finally hit me... one day I picked
up the phone and said, "Nina, what do you cook for dinner?
I need some help!". She gave me a few pointers and some quick
recipes that really saved my hide. Over the years I've called
on her for more tips and quick simple dishes. It's always been
a winner each time for both my husband and I. I've also learned
new techniques and thanks also to my own parents, various cooking
shows, books and my own twists, I've build up quite a few recipes....
let me rephrase... quite a few "simple" recipes.
It is my hope that the recipes on this website
help you in your search for quick and simple Italian dishes. If
it's not simple, I don't post it! Please visit my online
