Simple Italian Antipasto Recipe

So I’m ashamed to admit it, but I never really understood what “antipasto” was.  In fact I’m still not sure why some say antipasta while others say antipasto.  I do know that antipasti is plural.   I think antipasto is simply a word used to describe a small salad that involves olives, olive oil, and garlic and any other ingredients within reason.  

Simple Italian Antipasto Salad Recipe

Last month I tried out my own version of my antipasto salad on my inlaws who really know their italian foods.   It was the first time I prepared a food for them and I’m glad I chose this.   My sister in law Mary was having a nice pasta dinner and so the antipasto fit in great.   You can make it by going to the store and buying the following ingredients:
Artichokes in a jar
Roasted Bell Peppers (sliced will save time) in a jar
Fresh garlic (2-3 cloves chopped)
Kalamata olives (chopped and pitted saves lots of time) in a jar

Chop everything to size that you want, pour in a bowl, add a few swirls of extra virgin olive oil and mix well.   You are done.  

Add to it, change it, as long as it still tastes good. Make sure to buy pitted olives because this saves you time and you don’t have to worry about a pit accidentally slipping through the cracks and someone choking on it (as once happened to my husband – not kidding).
