Last week I was at the grocery store looking at the meat section. Just looking around seeing if there were any good deals when I saw a small package with lamb meat in it. It was cut up in pieces withe bone and the price was so cheap I thought, this is great! I’ll buy some lamb and have my husband make a stew with it, since he did it once before and I liked it. Wrong. He wasn’t too thrilled about it and so I said, fine I’ll figure out something else. Upon looking at the label closer I realized it was lamb neck, oops. What the heck do I do with lamb neck? I looked in my cookbooks, but could not find a lamb neck recipe. Besides it sounds gross. I looked online and actually found some lamb neck recipes but they all involved too many ingredients, so I decided to try something on my own.
I decided to try seasoning it with basic Italian ingredients – olive oil and garlic. I know adding olive oil and garlic does not automatically make a food dish suddenly Italian, but in reality, it sometimes can as in this lamb recipe. So I rubbed the meat with olive oil and shoved some crushed garlic pieces into the meat. Added a tad bit of crushed pepper and poured about 1/4 cup of dry white wine into the pan. Sealed it with foil and baked it. The meat was so tender and flavorful when it was finished I had wished I had bought even more.
I served it to my husband and he was quite surprised and delighted at the flavor. This will go into my recipe box for sure. I only include in my recipe box the dishes that both my husband and I really like. This way I will never pull out a dish that is disliked.
So now, I am proud to put my own recipe for lamb neck on my website for others to see. It is simple, easy and quick. All the traits I want to promote for Italian cooking.
