Try Using Lamb in Your Italian Pasta Sauce

In one of my previous posts I wrote about lamb meat.    A few weeks ago I was at the store and accidentally bought some lamb neck which led into a new lamb neck recipe.   I was so happy with the results I decided to go buy some more but there were no more lamb neck pieces available.  I grabbed the lamb loin chops which were marked as Manager Special.  I love finding Manager Specials because the price is often drastically reduced.  I think I paid around $3.50 for 3 lamb loin chops and I decided to use them that night since they were about to expire the next day. 

Basically, this recipe is the same as my regular marinara sauce recipe, except for one little change in the beginning.  When heating the oil, add in

Marinara Sauce with Lamb

the lamb chops with the fat.   Brown them over medium high heat on both sides letting the olive oil soak up all the flavor from the meat.   I move them around to make sure all the olive oil gets the flavor.  Do not over brown or over cook because you will need to bake them too.  Remove the lamb chops and set aside for baking.  Follow my lamb loin chop recipe if you do not know how to cook the chops.   At this point you should start smelling the aroma.   Proceed with my marinara sauce as you normally would.   This is probably the best sauce I’ve had in a very long time, and I thought my regular sauce was the best!  That just goes to show that creativity and discovery in cooking never stops.

I love this technique of adding meat for flavor without it being a “meat” sauce.     I used 3 lamb chops because that is what I had.  If I had 1 lamb chop I would have used 1.   That night I served angel hair pasta using the sauce, I had the lamb chops, cannellini bean salad  and a fresh Italian salad.   The flavors all blended well and complimented each other, so much to the point all I could think of for dessert was chocolate mousse cake; which in a very rare moment of weakness we went out and bought one to eat up that night.   That is how good the whole meal was!  If you have a stovetop espresso maker, pull it out and treat yourself to a latte.  It will top off the whole evening.
