Why I trust my mother in law’s cooking.

I noticed while typing up a bunch of recipes for my main website, www.simpleitaliancooking.com that I often have behind the scene stories which involve my mother in law.   In fact, most of the dishes I make are courtesy from my mother in law, Nina, or have been slightly modified from her version.  And I asked myself why do I often go to my mother in law rather than my own mother for recipes?    It isn’t that my own mother doesn’t know how to cook good food, but it is quite simple… my husband liked his mother’s cooking growing up and still to this day (except for a few things).   So I figure if I can cook like his mother did, but with a bit more health conscious modifications (organics, all natural, less frying and less meat), then I might be onto something.   My own mother is more into the seafood and pasta dishes like clams and linguine, which he won’t eat, even if his mother were to make it.  Seafood and pasta he has never liked so why waste my time making it?   My mother also makes more bean and rice dishes which are good and I should probably do more  of, but I really am trying to learn specific italian dishes for now.   So if my mom is reading this, don’t worry I’ll be coming around for some additional recipes soon!
