Tonight I made some meatballs and they turned out fantastic. I also like to make meatless meatballs which uses bulgar, breadcrumbs and other good stuff. But tonight – it’s the real deal.
With this current batch of meatballs, I used 2 lbs of beef (technically 1 lb bison and 1 lb 92/8 beef), plus the typical breadcrumbs, garlic, basil (fresh is best), and Romano cheese.

Because I wanted the full authentic feel to the recipe, I went ahead and fried them in a frying pan until they were cooked all the way through.
It took me about 1 1/4 hours from very start to cleaning up the kitchen – oh yes, and watching a little TV while cooking (not a good idea).
End result – they came out excellent and were family approved.
Here are a few tips when frying meatballs:
- Keep a lid on most or 3/4 of the way will help speed up the cooking.
- When you remove the lid always lift it AWAY from you first so as to protect any flying oil from hitting your arm.
- Open a few windows when cooking, the smell of the frying will linger otherwise.
- Let the meatballs fry up nicely before turning them the first time. If you try to turn them when they are not fried/browned, they will be harder to turn and will still stick to the pan. Just wait until it can easily be turned.
- As with all frying, figure it will get a bit messy and that you will have to do them in batches. Do NOT try to cram them all in the pan. You will need the space for turning.
- If making fresh sauce at the same time, cook the meatballs until they are practically done. Then add to the cooking sauce and let htem finish cooking. This will take about an hour in the sauce. Otherwise, just fry ‘em up until done and don’t forget to turn them.
