Recipe Details - makes 4 serving
Ingredients:
4 medium zucchini, peeled and sliced open lengthwise (if organic, no need to peel, just wash well)
1 Tablespoon olive oil
4 Tablespoons or more of pasta sauce
Romano cheese (optional) Use a vegan cheese if you cannot have dairy.
Instructions
1. In baking pan place zucchini face up.
2. Poke holes with fork in the zucchini
3. Drizzle the olive oil on top.
4. Bake at 350°F for 20 minutes.
5. Drizzle the sauce on the zucchini slices and cook another 10 minutes or so until zucchini is "very" soft.
6. Sprinkle cheese on top to melt, remove and enjoy!
Tip #1: Zucchini goes great with pasta, therefore this makes a great side dish.
Tip #2: This tastes best when it is very soft so make sure when baking, you test to see if there are any hard spots. You want
it soft enough that you can just cut it with a fork very easily.
