I got
this recipe idea from my mother in law who is Sicilian. It is
a great way to have zucchini and have it taste great. I've prepared
this dish as a side dish to a larger meal, and I've also prepared
it alone as a snack. It is a great vegetarian dish and for those
who require gluten free or wheat free recipes. For more recipes,

Tip #1: Zucchini
goes great with pasta, therefore this makes a great side dish. |
| |
|
| |
Tip #2: This
tastes best when it is very soft so make sure when baking,
you test to see if there are any hard spots. You want it soft
enough that you can just cut it with a fork very easily. |
