Italian Style Sauteed Beet Greens

 
Not for everyone, but this simple recipe is packed with vitamins especially iron and I recommend it as a great way to use the beet leaves and not waste them!
Serves: 4-6
 
 
 
       
  Ingredients   Italian Name
  1 bunch beet leaves (remove stems)   foglie di barbabietole
  2-3 TBLE extra virgin olive oil   olio extra vergine di oliva
  crushed garlic   aglio
       
       
  Instructions    
1. Wash beet leaves well. Throw out any yellow colored leaves.
2. Crush garlic and saute in the olive oil for about 3 minutes over medium heat in pan. Do not let garlic burn!
3. Add beet leaves to pan along with a little water to create steam and lower heat to Low
4. Stir frequently until leaves are wilted and soft.
   
  Tip #1: Make sure your leaves are not tough and add water as needed to keep leaves from sticking to pan.
