Ingredients
1 fresh loaf of ciabatta bread sliced lengthwis
3 cans of diced tomatoes - fully drained and rinsed
1 clove garlic for rubbing
Extra virgin olive oil
Grated Romano cheese
Dried oregano
Kosher or Sea Salt
Instructions
1. Preheat oven to 350 degrees F.
2. Brush the inside of the loaf with the olive oil.
3. Rub the clove of garlic on the bread - or chop finely and add it
- it is up to you how much you like garlic.
4. Spread the diced tomatoes on top of the bread evenly.
5. Place a good layer of your grated Romano cheese on top. If using
Parmesan cheese - add some salt.
6. Sprinkle the oregano and some kosher salt on top.
7. Bake in oven for 45-50 minutes. Do not let the cheese burn.
TIP #1: It is important that your tomatoes are drained
thoroughly otherwise it may be too soggy. I try to get out as much liquid
as I can.
TIP #2: If you use Parmesan Cheese, you will want to
use some additional salt because Parmesan is less salty cheese.
