Ciabatta Bread Pizza Recipe

A simple and fun recipe to make for the family or just yourself. Kids will especially like to help be a part of the pizza making process!

This recipe is from my husband's sister. It is a real easy recipe and a fun deviation from the standard Italian pizza crust recipes. Ciabatta bread is crunchy on the outside and soft and airy on the inside. I like to serve salad, pasta or antipasto on the side.

You will notice I did not give specific quantities for all ingredients in this recipe because it all depends on the size of the bread and personal taste. There is no wrong or right with this recipe.

  Serves: 3-4

  Ingredients   Italian Name
1 fresh loaf of ciabatta bread sliced lengthwise   ciabatta pane
3 cans of diced tomatoes - fully drained and rinsed   pomodori
1 clove garlic for rubbing   aglio
Extra virgin olive oil   Olio extra vergine di oliva
  Grated Romano cheese   formaggio Romano
  Dried oregano   origano
  Kosher or Sea Salt   sale

  Instructions
1. Preheat oven to 350 degrees F.
2. Brush the inside of the loaf with the olive oil.
3. Rub the clove of garlic on the bread - or chop finely and add it - it is up to you how much you like garlic.
4. Spread the diced tomatoes on top of the bread evenly.
5. Place a good layer of your grated Romano cheese on top. If using Parmesan cheese - add some salt.
6. Sprinkle the oregano and some kosher salt on top.
7. Bake in oven for 45-50 minutes. Do not let the cheese burn.

TIP #1: It is important that your tomatoes are drained thoroughly otherwise it may be too soggy. I try to get out as much liquid as I can.
TIP #2: If you use Parmesan Cheese, you will want to use some additional salt because Parmesan is less salty cheese.
