Lamb Chops Recipe

  I always keep my eyes open for Manager Specials at the store for meat. These are products that are marked down in price because they need to get them sold quickly. I will grab what I can and either use it that same day or freeze them immediately for later. This recipe is very basic, no fancy herbs or spices. Just olive oil, garlic and some dry white wine.   Ingredients   Italian Name
  3 Lamb loin chops   Spezzatino di lombata di agnello
  Extra Virgin Olive Oil   olio d'oliva
  5 Cloves of crushed garlic   aglio
  1/3 cup dry white wine   vino bianco
       
       
  Instructions    
1. Rub the meat with olive oil
2. Using a sharp knife, cut some slits in the meat and put the garlic in the slits.
3. Add a dash of black pepper on top.
4. Pour the wine into the pan with the chops.
5. Cover and bake at 350°F for 45-50 minutes.
6. When finished, check to make sure juices run clear and meat is cooked thoroughly. If in doubt, cook further. The correct temperature for lamb meat is 160°F (medium done). If overcooked, it will end up though and rubbery.
   
   
  Tip #1: Serve with pasta (use my marinara sauce with lamb recipe) and italian green salad and cannellini bean salad.
