I did not intend on buying lamb neck. In fact, I didn't know you
could. Now I do. I had no idea how to cook lamb neck, so I asked
myself, "How can I prepare this simply and with Italian ingredients?".
This is the recipe I came up with and it got a thumbs up from
my family members including me! Read my complete commentary regarding

Lamb neck - buy
however much you want. I used 1 lb and wish I had gotten more.
A lot of the weight is from the bone. |

4 cloves garlic
crushed not chopped |

White Wine |

Vino |

Extra virgin olive oil |

Instructions |

| 1. |
Remove any excess
fat from the neck meat. Do not bother removing the bone. |
| 2. |
Place in baking pan
and rub with olive oil. |
| 3. |
Cut slits in meat
to slide garlic into or use any natural crevasses. |
| 4. |
Sprinkle a dash of
pepper and salt on top (optional). |
| 5. |
Pour about 1/4 cup
dry white wine in bottom of pan. |
| 6. |
Bake at 350 F. for
30 minutes covered or until cooked through thoroughly. You
want an internal tempurature of 160 degrees F for medium done. |

When finished cut
meat off bone, it will come off very easily. |

TIP #1:
You can add more herbs if you want to change the flavor -
but it will do just that - change the flavor. |

TIP #2:
If adding to a soup, chop into smaller pieces. |

| |
Tip #3: The
meat alone will not be enough for a main meal unless you use
more meat or add it as part of a main meal such as pasta.
It really depends on how much meat you want to eat. |
