How to Make Italian Pesto

 
   


Here is a quick recipe to make homemade pesto!

 
Pesto can be used for a variety of purposes. From a spread to flavoring pasta. You can use it to flavor your soups too. Many recipes call for the use of pine nuts, but if budget is a concern, feel free to omit it. Here is a recipe from my mother-in-law.
  Serves: 1 Cup approx.

  Ingredients      
  2 cups of fresh basil      
  2 cloves of garlic      
  2 Tablespoons olive oil (to taste and texture)      
  salt      
  Approx. 2 Tablespoons toasted pine nuts(opt.)      
  Approx. 1/4 Cup Romano cheese (opt.)      
         
         
  Instructions      
1. Wash the basil and let dry overnight.
2. Chop the basil finely.
3. Process the garlic, basil, olive oil and salt through a food processor. If you don't have a food processor, use a Mortar and Pestle.
4. Add more olive oil to get the texture that you are looking for.
   
  TIP #1: Freeze any extra amounts in the freezer for later use. Keep in mind these are all approximate measurements. Feel free to modify the recipe to suit your tastes.
