How to Make Ricotta Spinach Pizza

 

 

A great alternative to your standard pizza. Perfect for vegetarians too!

Ricotta Spinach Pizza Recipe
I make this pizza for lunch, but could easily turn it into a dinner by adding extra sides or using the pizza as a first course. The recipe uses minimal ingredients. I like to think of this pizza as an open faced calzone, it is very good and extremely simple. Perfect for kids too - a fun way to get them to eat their spinach!
      Serves: 2-4
     


 
 

 

 
  Ingredients   Italian Name  
  3/4 cup ricotta cheese   formaggio ricotta  
  1 cup thawed and drained frozen spinach   spinaci  
  1 minced garlic   aglio  
  extra virgin olive oil   olio di oliva  
  1 large tomato sliced thin   pomodro  
  pinch of salt   sale  
  1 pizza crust (store bought is fine)      
         
  Instructions      
1. Preheat 450 degrees F.
2. Rub a little olive oil on bottom of crust.
3. Mix garlic with about 1 Tablespoon of olive oil and brush on top of crust.
4. Mix ricotta and spinach in separate bowl and spread on crust.
5. Add sliced tomatoes to create a top layer.
6. Sprinkle salt over pizza (this helps bring more flavor).
7. Drizzle a little of the olive oil on top of tomatoes.
8. Place on middle race in preheated oven.
9. Cook for 13-15 minutes (until pizza crust is nicely cooked).
   
   
   
  TIP #1: I use kosher salt at the end. When I first made the pizza it needed some more pizzazz - a touch of salt helped.
  TIP #2: Add your own ingredients/toppings - like olives or sliced onion.
  TIP #3: A nice basic italian salad or antipasto dish goes great as a side.
