Risotto with Orzo

 

 

Risotto is considered a Northern Italian dish, and is often used with white rice. I decided to use orzo pasta instead and it was amazing!

 
 
What I personally like about this dish is how quick it is to make (15 minutes), but also how flexible it can be with various ingredients. Let me know what you think or any suggestions here at my blog.
Serves: 4
       

 
         

 

 
  Ingredients   Italian Name  
  1 1/2 Cups Orzo   orzo  
  3 Cups water or broth (or 1/2 of each)   acqua  
  3 Garlic cloves chopped   oglio  
  1/2 Cup grated Romano   Romano formaggio  
  1/4 Cup chopped fresh parsley   prezzemolo  
  1/2 Cup sliced or chopped mushrooms   funghi  
         
         
  Instructions      
1. Bring the water and broth to a boil in a large sauce pan.
2. Add the orzo and cook per the boxes instructions (about 9 minutes).
3. When the liquid is absorbed, add the garlic, Romano, parsley and mushrooms and mix well.
4. Turn heat down to low and let everything cook together for a few minutes.
5. When ready, serve warm.
   
  Tip #1: Stir the orzo every so often to prevent it sticking to the bottom.
  Tip #2: Feel free to add a few of your own ingredients such as fresh basil, chopped red pepper or even sliced grape tomatoes.
  Tip #3: Turn this into a main dish by adding some hearty vegetables or some chicken.
