Italian Turkey and Rice Recipe

 
    Learn how to make a great turkey dinner or lunch with this recipe!
 
I got this recipe from my sister-in-law Mary who is an excellent cook. Last summer she taught me how to make this recipe and now I'm glad to be able to include it in my list of recipes! It is easy and a great way to use any leftover turkey meat from Thanksgiving or any other time. Chicken can be substituted as well, but turkey is my favorite.
  Serves: 6  
   
 
 
 

 
  Ingredients      
  1 large onion chopped      
  handful fresh chopped basil      
  handful chopped fresh Italian parsley      
  3 cloves garlic chopped      
  2 Tble butter      
  1 Tablespoon olive oil      
  2 turkey breasts chopped (precooked)      
  2 C brown rice      
  4 C water or stock      
  10 oz. sliced mushrooms      
  1/2 C to 1 C of Romano cheese      
         
  Instructions      
1. Saute onion, basil, parsley and garlic with butter and olive over medium heat until onion is translucent.
2. Add in the brown rice, turkey and water or stock and bring to a boil.
3. Reduce to low medium and add mushrooms.
4. Cook until rice is done.
5. Add in 1/2 cup to 1 cup of grated Romano cheese.
6. Mix and serve with extra cheese on top.
   
  TIP #1: You can use chicken as a substitute. You can even omit the turkey all together - it tastes great as a rice dish.
