Recipe Summary
This recipe is super flexible which means less stress and you can even get as creative as you like. It’s similar to my antipasto salad recipe but instead of serving it all in a bowl, we spear the individual pieces onto a skewer.
Each person can then just grab their own skewer!
Ingredients
For this recipe you’ll need the following ingredients:
- Grape or cherry tomatoes
- Prosciutto
- Mozzarella pearls (these are the small balls packed in water or marinade)
- Salami slices or other meats like pepperoni, etc.
- Mixed pitted olives – kalamata, Italian/green, and/or black. I buy a jar of mixed olives.
- Roasted red pepper – I use the kind in a jar.
- Other ingredient ideas can be found below.
Recommended Equipment
These are 8″ skewers that are made of stainless steel. They are easy to clean and dishwasher safe.
Here are some serving platters that can work for placing the skewers on.
Step by Step Instructions
For exact measurements check out the recipe card below. These steps will explain what’s involved when making these skewers.
Step 1. Gather your ingredients. I like to lay them out on a plate and in bowls so it’s easy to assemble.
Step 2.One at a time, place each ingredient on the skewer. This is the order that I like, but you can arrange them in any order that you want.
Feel free to also add more ingredients on each skewer to make them fit.

- Salami – fold a slice in thirds, then in half so it fits on the skewer. Feel free to cut them in half to make them smaller.
- Mozzarella ball
- Green olive
- Pepperoni – same as salami, just fold it in thirds then fold over so it fits on the skewer.
- Tomato
- Kalamata Olive/Black Olive
- Mozzarella
- Roasted red pepper (if using)
- Prosciutto (or other meat) – Cut a slice in half so you get two servings from one slice. Fold in thirds then in half and spear it.
Step 3. Brush a little olive oil over the ingredients for added flavor. This is optional.
Your first skewer is complete! Now repeat the process until all ingredients are used up.
PRO TIP: For presentation purposes, you can place the antipasto skewers on a platter, and everyone can just grab their own skewer.

Recipe Tips & Modifications
This recipe couldn’t be easier to modify and adjust to your own tastes and necessary quantity requirements.
For modification ideas try any of the following:
- Use hard deli meats such as hard salami or pepperoni instead of the slices.
- Use marinated mozzarella balls for more flavor. Just be mindful that it might make them oily and messier to eat.
- Turn these into vegetable skewers by replacing the meat with chucks of zucchini, fennel, and additional cheeses.
Pro Serving Tip: I recommend providing plates or bowls for guests to transfer the food items from the skewer to their plates/bowls. Offer some extra virgin olive oil and balsamic vinegar on the table for them to drizzle some on if they want to.

Notes
- Be flexible. Use my ingredients as a starting point. Use the recipe as is, or modify to your own tastes. Add items like artichoke hearts, vegetables, pepperoncini, etc.
- Adjust quantities as needed. The above recipe is for 6 skewers – assuming one skewer per person. Increase the quantities based on what you need.
- As for the salami and pepperoni, I bought them as slices sold in a package. It was convenient and easy. You can also use hard salami or pepperoni.
- You can make these ahead of time, no more than a day. Just keep them tightly wrapped in the fridge so nothing dries out.
