What is authentic?
Authentic recipes mean different things to different people so let me explain what I consider authentic. As someone who grew up in an Italian family (and married into another Italian family) these recipes represent Italian culture as it relates to the history, preparation and presentation of the recipe itself.
What you won’t find are Americanized recipes here where pasta is swimming in a bowl of gooey cheesy sauces, or ingredients modified to fit a particular fad diet. If you want that, go to the Olive Garden or Macaroni Grill. Nothing wrong with that, but that’s just not authentic.
Italian authentic recipes don’t have to be centuries old. They just have to be what Italians would recognize as having their basic principles from the old country. For example, pasta and broccoli is an authentic recipe. There are a ton of variations, but it’s authentic. Italians in Italy have made, and continue to prepare this basic recipe in the hills of Tuscany as well as inside the city walls of Rome.
