Easy and Healthy Chicken Marsala

pasta alfredo con pollo
Pasta Alfredo con Pollo (Chicken)
I'm not a fan of overly creamy Italian chicken recipes. This is often what many Italian restaurant chains tend to do to please their guests. But a real Alfredo is traditionally just a light coating that clings to the pasta – not a swimming pool of white gooey cheese. This recipe is perfect for a nice dinner and you can even use left over roasted chicken pieces to make it an even easier dish to prepare!

Common Italian Chicken Recipe Ingredients

When cooking with chicken Italian-style there are some common ingredients and seasonings that you can use to create easy and simple Italian chicken recipes.

Garlic powder vs fresh garlic. I almost always prefer to use fresh garlic instead of the powder form. The flavor is just different, but there is a place for using powdered garlic. Sometimes it’s used to flavor soup or to use as part of a marinade.

Italian cheeses. The most common Italian cheeses you’ll want to use are Parmesan cheese and Romano cheese. Parmesan is cheaper but the flavor isn’t as strong and biting as Romano. I like to use Parmesan on baked pastas; it also melts more than Romano. Romano however has a stronger bite and a little goes a long way. Either way, you can use them to help season soup or a variety of chicken dishes – especially the ones that can be served with pasta.

Fresh Tomatoes are always handy to have around. I often use cherry or grape tomatoes when creating an easy chicken dinner.

Additional Cooking Tips

How to get tender and juicy chicken. As long as I don’t forget, my chicken dishes always come out tender when I soak the chicken in a salt brine for at least 3 hours. Sometimes this is a whole chicken and sometimes just chicken breasts.

Rinse the chicken thoroughly after brining and proceed as usual. If you don’t rinse it all the way the chicken will be super salty – I’m speaking from experience!
