Easy Zucchini Pizza Boats Recipe
Well, okay a boat is hollow and these aren’t. I couldn’t think of a better name because they really look like little long boats… canoes??
The origin of this recipe for me which I’m sharing with you comes from my mother in law who is Sicilian. It’s tried and true a zillion times over.
Every time we would go visit her in the summer, she would always just grab some vegetables and whip something up. This is one of them.
But the recipe is basically broken down into three steps:
- Slice the fresh zucchini
- Top with olive oil
- Bake in an oven, topping with sauce & cheese at the end. It’s that easy!

Baked Zucchini Pizza Boats Recipe Details
- 4 sliced medium zucchini (lengthwise) zucchine
- 1 Tablespoon olive oil olio d'oliva
- 4 Tablespoons tomato/pasta sauce salsa di paste alimentari
- grated Romano cheese or shredded mozzarella Romano formaggio
In baking pan place zucchini face up.
Poke holes with fork in the zucchini
Drizzle the olive oil on top.
Bake at 350°F for 20 minutes.
Drizzle the sauce on the zucchini slices and cook another 10 minutes or so until zucchini is still firm, but soft enough to spear with your fork.
Sprinkle cheese on top to melt, remove and enjoy!
Tip #1: Zucchini goes great with pasta, therefore this makes a great side dish.
Tip #2: This tastes best when it is very soft so make sure when baking, you test to see if there are any hard spots. You want it soft enough that you can just cut it with a fork very easily.

You can use this recipe as a side dish to a larger meal, or as a stand alone snack or lunch. It is a great accompaniment to a dish of pasta or a chicken dish such as baked Italian breaded chicken breasts, or perhaps just a salad.
