This recipe for Italian meatless meatballs is a great alternative to the typical meatball.

1. In a saucepan combine 1 cup of bulgur and 2 cups of water. Bring to a boil.

PRECOOK THE BULGER

2. Lower heat to low and cook for 15-20 minutes until bulgur is tender and chewy. It will not be mushy.

LOWER THE HEAT

3. Cool the bulgur by keeping in the fridge until needed, or for a quick cooling, place in the freezer for 10 minutes until cooled.
