Pasta with Chicken & Olives

This easy and delicious Italian recipe uses the classic combination of pasta with chicken and olives. It is perfect for those nights when you just want a quick and satisfying dinner. Mixed with fresh tomatoes cooked down with garlic and olive oil, this flavorful Italian recipe is a must have.

LET’S GET STARTED!

Making pasta with chicken and olives is best when using short pasta with this dish such as penne, rigatoni, or farfalle.

1. In a large pot, bring water to a boil and cook pasta until al-dente or according to package instructions. Reserve some pasta water for later, if needed.

BOIL THE WATER

2. Season the chicken breasts with salt and pepper on both sides, then cut into 2" long slices.

SEASON THE CHICKEN

3. Meanwhile, in a large saute pan or skillet, heat the olive oil over medium heat. Add in the chicken pieces and cook 5 minutes turning occasionally or until they are fully cooked through with no pink inside. Should be 165F internal temp.
