We all have heard of the Mediterranean diet, and how great it is because it ‘s not really a diet – it’s just eating a well balanced supply of food.   From fish to grains to pasta and fruits and veggies.

But, you’ve also seen recipes such as Mediterranean chicken, or Mediterranean pasta.   Just what does that mean exactly?

In a nutshell, it means a dish that uses Mediterranean ingredients.   Some common ingredients to turn a basic dish into a Mediterranean dish are kalamata olives, artichoke hearts, tomatoes, capers and cheese.

Here is basic chicken and pasta recipe:

Take 3 boneless chicken breasts and slice into 1/2 inch strips and then cut in half, or smaller.  Remember this will be served with pasta.

In a medium pan heat 2 Tablespoons of olive oil over medium high heat.  Once cooked, remove from pan and lower heat to simmer.

Add in 2 cloves of crushed garlic with a little bit of olive oil and saute 2 minutes.

Add in some chopped artichoke hearts, 1/2 cup of sliced kalamata olives, 3 diced tomatoes, 2 Tablespoons fresh parsley. All of this can be done in a food processor.

Cook down for about 7 minutes.  Meanwhile, begin bringing your pasta water to a boil.

Add back in the chicken plus 2 Tablespoons of broth and simmer about 3 to 4 minutes.   If the pasta is not close to being done, simmer, then cover and turn stove off.

Cook the pasta and add the pasta to the pan and mix well.

Serve warm topped with Romano or Parmesan cheese.

That is a basic Mediterranean recipe.   You can also add in some sliced red peppers too, roasted red pepper from a jar will work great.

Serve with nice warm bread or even a pizza.
