Baked Zucchini Pizza Boats

Here's another fun way to make zucchini a family favorite! Easy healthy sidedish for your dinner meal!

  • 4 sliced medium zucchini (lengthwise) zucchine
  • 1 Tablespoon olive oil olio d'oliva
  • 4 Tablespoons tomato/pasta sauce salsa di paste alimentari
  • grated Romano cheese or shredded mozzarella Romano formaggio


  1. In baking pan place zucchini face up.
  2. Poke holes with fork in the zucchini
  3. Drizzle the olive oil on top.
  4. Bake at 350°F for 20 minutes.
  5. Drizzle the sauce on the zucchini slices and cook another 10 minutes or so until zucchini is still firm, but soft enough to spear with your fork.

  6. Sprinkle cheese on top to melt, remove and enjoy!

Recipe Notes

Tip #1: Zucchini goes great with pasta, therefore this makes a great side dish.

Tip #2: This tastes best when it is very soft so make sure when baking, you test to see if there are any hard spots. You want it soft enough that you can just cut it with a fork very easily.
