Marinated Roasted Sweet Peppers

This marinated roasted sweet peppers recipe is a popular dish in Sicily. And like many of my Italian recipes, this one couldn’t be easier. With just a few ingredients and a little time, you’ll have a wonderful appetizer for parties, or a side dish for a larger meal.

Recipe Summary

This recipe is very flexible and adaptable to your tastes. The premise however is the same regardless. Roast the peppers in the oven, create a marinade, peel off the charred skins and let it all marinate together in a bowl, ideally overnight.

As you’ll see in the video below, I made this recipe for a party we held for my mom’s return from a 10 day tour of Sicily. This one one of the recipes we had, but I have to say, the peppers tasted even better the next day!

Ingredients

For this recipe you just need a few simple ingredients.

  • Sweet bell peppers (yellow, red, orange) Not green.
  • Extra virgin olive oil
  • Garlic
  • Fresh flat leaf Italian parsley (you can use curly if you don’t have the Italian. But it will be a brighter flavor).
  • Salt and pepper to taste (optional)

Equipment Needed

  • roasting rack or baking pan for high temperatures
  • medium bowl

Step by Step Instructions

For exact measurements check out the recipe card below. These steps will explain what’s involved in making these roasted marinated sweet peppers.

Step 1. Set oven to broil and place the oven rack 6 inches below the heating element.

Step 2. Place the peppers on a baking pan. Do not cut them or core them. You want them whole.

Step 3. Broil for 15-20 minutes (approximately 500F if you don’t have a broiler), turning every 3-5 minutes until all sides are well charred.

Pro Tip: Ovens vary greatly so timing will vary as well. Also keep in mind that roasting at such a high temperature will cause the oven to smoke, so don’t be surprised if the smoke detector goes off. This is very common.

You can also roast the peppers at a lower temperature such a 450F, but this will take longer and I have not roasted at this temperature. It will however make the peppers a little softer as they are baking longer – which is not a bad thing.

Step 4. Once your peppers are done, remove from oven. Carefully transfer the peppers to a medium size bowl and cover tightly with plastic wrap or a lid. Let the peppers steam for 20 minutes.

Pro Tip: Do not rinse the bell peppers or try to cool them down. You want them hot!

Step 5. Meanwhile, make the marinade by combining the olive oil, fresh parsley, and minced garlic in a medium bowl.

Step 6. When the peppers are ready, use your hands to peel off the outer skin of the peppers. You’ll notice how the peppers have turned brown in the flesh where the black charring occurred. This is where the flavor is!

Step 7. Next, slice the peppers into 1/4″ strips and add to the bowl that has the marinade. Stir to ensure all the peppers are coated.

Step 8. Store in the fridge covered for at least 6-8 hours, but for best results overnight.

Step 9. Serve at room temperature and season with salt and pepper to taste, if desired.

Recipe Tips & Modifications

Here are some recipe ideas to add even more flavor to your peppers!

  • Add a Tablespoon of balsamic vinegar to the marinade
  • Add a teaspoon or two of capers (rinsed and drained) to the marinade
  • Serve with some soft cheeses such as goat cheese.
  • Use mini sweet peppers instead of large ones. Make sure to monitor the oven!
