This Italian baked zucchini recipe is a great way to serve zucchini. This easy and delicious side dish is tossed with seasoned breadcrumbs and baked in the oven until golden brown.

There are many versions of this recipe that I’ve made for years. This is my latest variation (shown above) that uses the basics of combining zucchini and Italian flavors. Just like my other zucchini and rosemary recipe, this one is similar, but prepared differently. Baked Zucchini and Breadcrumbs Recipe
For this recipe you just need a few simple ingredients.
- extra virgin olive oil
- zucchini – slice them into half-moons
- breadcrumbs – store-bought or homemade
- parsley – dried or fresh is fine, I use dried
- Romano cheese – you can use Parmesan if you want. I prefer Romano
- onion – diced
- garlic – finely diced
- cracked black pepper to taste
- rosemary – dried or fresh
Equipment Needed
- small mixing bowl for the breadcrumb mixture
- medium bowl for tossing the zucchini with the breadcrumbs
- baking dish
Zucchini and Breadcrumbs Instructions
For exact measurements check out the recipe card below. These steps will explain what’s involved in making this Italian baked zucchini recipe.
Step 1. Preheat oven to 375 F.
Step 2. In a small mixing bowl, mix the breadcrumbs, cheese, and parsley.
Step 3. Slice the zucchini into half moons and place in a medium bowl.
Step 4. Add the breadcrumb mixture, onions, and garlic to the zucchini and toss to coat evenly.
Step 5. Drizzle a little of the olive oil in a baking dish.
Step 6. Pour the zucchini into the baking dish and top with any remaining breadcrumbs.
Step 7. Sprinkle rosemary on top and drizzle with olive oil.

Step 8. Bake in the preheated oven for 40 minutes, or until breadcrumbs are golden brown.

Zucchini Bake with Breadcrumbs
Equipment
Ingredients
- 2 Tbsp extra virgin olive oil or as needed
- 2 zucchini sliced in half-moons
- 1 tsp parsley dried
- 1 dash cracked black pepper to taste
- 1/3 cup breadcrumbs or as needed
- 1 Tbsp Romano cheese
- 1/4 onion diced
- 1 clove garlic finely diced
- 1 tsp rosemary dried or fresh
Instructions
- Preheat oven to 375 F.
- In a small mixing bowl, mix the breadcrumbs, cheese, parsley, onions, garlic and pepper.
- Slice the zucchini into half moons and place in medium bowl.
- Add the breadcrumb mixture to the zucchini and toss to coat evenly.
- Drizzle a little of the olive oil on the bottom of the baking dish.
- Pour the zucchini into the baking dish, spread out in a layer and top with any remaining breadcrumbs.
- Sprinkle rosemary on top and drizzle with olive oil.
- Bake in the oven for 40 minutes or until golden brown.
