Chicken Prosciutto and Mozzarella Roll Ups

This recipe for chicken rolled with slices of prosciutto and shredded mozzarella is amazing. When I made this recipe the other week, I knew it was a keeper for sharing with friends like you.

As impressive as it sound, this dish is actually very easy to make for dinner, and can be easily prepped ahead of time too.

What I love about this recipe is that we don’t need to fry the roll ups before baking, as many recipes instruct. Instead, I wanted to create an easy chicken recipe that is baked 100% in the oven.

Recipe Summary

This delicious no-fry Italian chicken recipe can be ready to serve in about an hour. I use two large chicken breasts that can be thinly sliced into 4 to 6 fillets for the roll ups. Layers of prosciutto and mozzarella are placed inside the chicken as the filling.

If you have any leftovers, you can slice the chicken roll ups and toss them in a salad. They taste out of this world hot or cold!

Ingredients

This recipe uses just a few ingredients. I’ve included them below.

  • Thinly sliced chicken breasts – but not as thin as cutlets. About 1/4″ thick.
  • Cracked black pepper and salt (optional)
  • Slices of Prosciutto
  • Shredded Mozzarella. I use a block of mozzarella and shred it using a grater. You can use sliced mozzarella if that’s all you have.
  • Extra virgin olive oil

Step by Step Instructions

Here are the steps for creating this recipe. I include measurements in my recipe card below, although most ingredients are fairly flexible for this dish.

Step 1. Preheat the oven to 350F.

Step 2. Slice your chicken breasts so they are approximately 1/4″ thick.

Step 3. Using a meat mallet (or rolling pin like I do), tenderize the meat – but don’t make the breasts too thin like cutlets. We just want to break up some of the muscle fibers and get the breasts to about 1/4″ thick.

Step 4. Season both sides of the breasts with salt and the cracked black pepper.

Step 5. Place a slice of prosciutto followed by the shredded mozzarella on each breast, along with a drizzle of the olive oil.

Step 6. Next, gently roll up the chicken starting with the narrow end. This allows more even cooking and helps hold the chicken together.

Step 7. Secure the roll ups by using toothpicks or kitchen twine. I prefer the toothpicks, but remember to remove them all before serving! Sometimes they blend in once cooked so make sure they are placed where you’ll see them!

Step 8. Place the roll ups in the baking pan and bake for 30 minutes or until the internal temperature is 165F.

Pro Tip: If some of the chicken roll ups are smaller than others, they may cook faster. In this case, check their temp at 25 minutes and remove them if they are done. this will help prevent the small roll ups from drying out.

Recipe Variations and Tips

For modification ideas try any of the following:

  • Add a layer of pesto for extra flavor.
  • Swap the mozzarella for slices of provolone, fontina, or even havarti, all of which melt easily.
  • Swap the prosciutto for pancetta which is often sliced thinly too.
  • Let the roll ups cool and then cut into 1/2″ slices for appetizers!

Storage and Prep Tips

  • This recipe can be made in advance by storing the roll ups in the fridge for a day until ready to bake. Remove and let sit for 20 minutes to stabilize internal temps before baking, otherwise add an extra 5 to 10 minutes.
  • Store leftovers in an airtight container in the fridge or freezer. They’ll last for a few months in the freezer. To reheat, let thaw in the fridge then reheat for 10 to 15 minutes in the oven at 350F. You can also reheat in a covered saute pan with a little water for steam.
  • To help your chicken remain tender, marinate them for a day in a salt-water brine.
