This dry Italian seasoning chicken recipe is stress-free and hassle-free. And it uses simple ingredients you probably already have in your kitchen. This makes it perfect for weeknight dinners when you’re short on time and want an easy and delicious meal.

About this Italian Seasoning Chicken Recipe
There are three methods for cooking chicken breasts with Italian seasoning – in a skillet on the stove, baking in the oven, or grilling the Italian chicken. I’ve included instructions for all three methods below.
For many of my Italian recipes, I use my own homemade collection of dried Italian herbs on my chicken to achieve a specific flavor. But for this recipe, I am changing things up and using a store bought dry Italian seasoning mix.
Cooking with Dry Italian Seasoning
Many people have store-bought Italian seasoning in their cupboard, but don’t know how to use it in recipes. Well, I can’t think of a better way to use Italian seasoning mixes than with chicken!
Mixes can have quite the range of dry Italian herbs and seasonings, so always check the ingredients list to make sure you like everything included.
The standard ingredients most often found in a Italian seasoning mix include the following as shown in the image below. However the suggestion on the label for using in pizza, I strongly disagree with!

- Parsley
- Basil
- Oregano
- Rosemary
- Marjoram
- Thyme
If you’re not a rosemary or thyme fan, then make sure to read the labels and choose a seasoning mix that doesn’t include them. But most do.
The type of seasoning I use in this recipe has the above herbs which makes this easy chicken dish taste and smell absolutely amazing. This recipe is full of flavor with every bite and will impress even your most finicky of eaters.

Kitchen Equipment You’ll Need
- Oven safe cast iron skillet or large oven-proof frying pan (if using the Skillet Method)
- Casserole dish (if using the Baked Method)
- Kitchen knife
- Cutting board
Ingredients

This flavorful Italian seasoning chicken recipe requires minimal ingredients. You can find specific measurements in the recipe card at the bottom of the post.
- Extra virgin olive oil. We use the olive oil for cooking the chicken and drizzling on top towards the end.
- Butter. The butter is used to create a butter olive oil mixture to cook the chicken in.
- Boneless chicken breasts. These should be skinless and bone free.
- Italian dry seasoning. This can be from a packet or a small spice jar from the store.
- Salt and Black Pepper (optional)
- Sliced Tomatoes 1/4″ thick. Any tomato will do, but the meatier the better.
- Romano Cheese. You can substitute Parmesan cheese if you want.
- Breadcrumbs (optional). I love breadcrumbs on top, but it is not required.

This is the seasoning I used in this recipe. You can order some online at Amazon or find it in your local grocery store.
Skillet Method for Italian Seasoned Chicken
1- Preheat oven broiler and place the oven rack 6 inches from the top.
2- Slice each chicken breast in half to create 4 total. Make sure they are no more than ½ inch thick.
3- Season with salt and black pepper on both sides. This step is optional.

4- Next, season each side of the chicken breasts with the Italian seasoning mix. Rub the dry seasoning into the chicken breasts so it is evenly covering the meat. If you plan on baking these, proceed to the next Section for Baking instructions.
5- Heat a large or medium oven proof frying pan or even a cast iron skillet with the butter and olive oil over medium heat.

6- Once the butter is melted, carefully place the seasoned chicken breasts in the skillet in a single layer and cook for 3-5 minutes or until about ¾ of the breast is cooked through.

7- The color of the chicken will turn white and have golden brown marks on it from the pan. Then flip the breasts over and cook for about another 2 minutes, or until it reaches an internal temperature of 165F.
8- Remove from heat but keep the chicken in the pan. If your pan is not oven proof transfer the chicken to an oven safe casserole dish for the next steps.
9- Next, top the chicken with the sliced tomatoes, cheese, and breadcrumbs. Drizzle olive oil over the breadcrumbs. However if you don’t have it – you can skip it if you have to.
10- Place in the preheated oven and broil for 30 to 45 seconds to slightly toast the breadcrumbs and soften the tomato.
Serve warm and enjoy!
Baked Italian Seasoned Chicken Method

If you’re not a fan of frying or sautéing your chicken over a stove, then you can choose to bake the chicken breasts in the oven instead. Follow these easy steps.
1- Preheat the oven to 350F.
2- Prepare the chicken as I describe above, through step 4.

3- Add 1 Tablespoon of olive oil in the baking dish and spread around.

4- Place the chicken breasts in a single layer in a 13×9 baking dish or casserole dish, and cover with foil.

5- Bake for 25 minutes, then remove from oven and top with a layer of sliced tomatoes, Romano cheese, and breadcrumbs. Drizzle olive oil on top of the breadcrumbs.

6- Return to the oven, uncovered, and bake another 10 minutes or until the chicken reaches an internal temperature of 165F.
Grilled Italian Chicken Method
If you want to grill the chicken using the dry Italian seasoning mix, then you really need to start with a chicken marinade.
1- Create a marinade of 2 Tablespoons of olive oil mixed with 3 Tablespoons of the Italian seasoning.
2- Rub the chicken breasts with the marinade and place in a plastic bag. Let it marinate in the fridge for a few hours.
3- Heat the grill to high heat and add the breasts. Grill for 5 minutes and then flip and grill for another 5 minutes, or until the internal temperature reaches 165F.
4- Top the chicken with slices of tomato, cheese, and the breadcrumbs. Close the lid and cook for about 2 minutes.
Questions You May Have
This recipe uses a rub of dried herbs, not an Italian dressing. Using a dressing will have different flavors because it doesn’t include the same spices and herbs in an Italian seasoning mix.
You can prep the chicken and seasonings for a day in advance. Keep it in an airtight container in the fridge.

Storage and Reheating
If you want to store leftovers, you’ll want to know how to properly store and reheat your chicken breasts so they can be used later.
Storage
To store your seasoned chicken breasts in the fridge, simply place in an airtight container. They will last for up to 3 days. Wrap them in plastic wrap and then place in an airtight container in the freezer to store them long term. They will last up to 3 to 6 months.
Reheating the chicken breasts
To reheat your Italian seasoning chicken dish, either microwave on the Reheat setting for 3 minutes so they don’t dry out. Your microwave may be more powerful than mine, so check it as it’s reheating.
You can also reheat the breasts by placing them in a saute pan with a little water. Cover and reheat over low heat for 5 minutes or until heated through.
If your chicken is frozen, let it thaw before reheating.
Variations for this Chicken Recipe
Although this recipe tastes great as it is for easy dinners, there are plenty of variations you can use to change it up a bit. Here are some ideas.
- Use a mix of chicken parts, not just breasts, such as chicken thighs – or use bone in chicken.
- Incorporate with pasta. Slice the chicken breasts after cooking in the pan, omit the broiling, and add the slices to some simple pasta such as my recipe for midnight pasta where no sauce is used.
- Use different cheeses. Top with mozzarella or provolone cheese instead of grated Romano cheese. This will make the cheese more stringy and stretchy.
- Make a sandwich. Toast some Italian bread and make a sandwich with the chicken. This is also a great way to use any leftovers for another meal for busy weeknights.

One Pan Skillet Method
- Preheat oven broiler and place the oven rack 6 inches from the top.

- Bake for 15 minutes then remove from oven and top with a layer of sliced tomatoes, Romano cheese, and breadcrumbs. Drizzle olive oil on top of the breadcrumbs.
- Return to the oven, uncovered, and bake another 10 minutes or until the chicken reaches an internal temperature of 165F.
Grilled Chicken Method
- Create a marinade of 2 Tablespoons of olive oil mixed with 3 Tablespoons of the Italian seasoning.
- Rub the chicken breasts with the marinade and place in a plastic bag. Let it marinate in the fridge for a few hours or overnight.
- Heat the grill to high heat and add the breasts. Grill for 5 minutes and then flip and grill for another 5 minutes, or until the internal temperature reaches 165F.
- Top the chicken with slices of tomato, cheese, and the breadcrumbs. Close the lid and cook for about 2 minutes.
Notes
- This recipe goes great with some simple pasta on the side, antipasto, salad or potatoes.
- For a healthier version, use the Baking method.
- Feel free to adjust quantities as you see fit. Different seasonings have different ratios of spices and herbs so yours may taste differently than mine. Adjust to suit your personal tastes.
